THE Brien household in Ballinamallard was a hive of activity from early morning on Shrove Tuesday as dozens of pancakes were tossed for charity.

Young people from Ballinamallard Community Nursery were among the first callers on the day, and from then on, there was a steady stream of visitors eager to obtain the freshly-prepared pancakes, hot off the pans.

Jane Brien (pictured left), started the pancake-making initiative three years ago to raise funds following floods in Mozambique.

It was her grandson who inspired her to do something the first year, and it has raised over £1,000 since it started.

It was early on Monday morning when preparations began and it was not long until the first pancakes had already gone while some had placed orders in advance.
